Cheesy Taco Pasta
If you're looking for an easy, mid-week dinner recipe for the family (or yourself), than this dish is FOR YOU. It has all of my favorite things: cheese, pasta and salsa! That's right - SALSA, not pasta sauce. My sister found this recipe and tried it out and I knew it was something I needed to try. I ended up making it for my cousins one night the following week and it was a crowd favorite.
You can definitely mix things up a bit to jazz up the recipe to your liking, but here is how I made it.
2 pound ground turkey
2 packets taco seasoning or about 3 1/2 tablespoons homemade taco seasoning
2 cups water (for pasta)
1 cup jarred mild salsa
1 pound uncooked pasta
2 cups shredded Mexican-style cheese
In a separate pan, preheat a large deep skillet over medium heat.
Add ground turkey
Cook, stirring occasionally until cooked thoroughly.
With turkey, there usually isn't a ton of grease - drain if needed.
Stir taco seasoning into ground turkey.
Mix ground turkey and pasta in one pan.
Stir in cheese and salsa.
Season with additional salt and pepper if needed.
Serve with optional toppings if desired.
